
As promised, I said I'd share the rib recipe if it was worth sharing. Let me tell you- this was a restaurant quality recipe!
When we found out we'd pretty much be snowed in this weekend, my husband had the idea to recreate a meal similar to what we had when our family went to Texas last year.

Ray's Salad
Steak Fries
Biscuits
Corn
The recipe for the ribs was fabulous. We have a
Nesco roaster that my dad got us for Christmas eons ago. Dusty found this recipe on
nesco 3 pounds spareribs or country-style lean ribs
hot water to cover ribs
1 large onion, sliced
2 cups BBQ sauce of your liking
1 bay leaf
Preheat nesco roaster oven to 250 degrees.
Set rack in preheated cookwell. Arrange meat on rack. Add onion, bay leaf and hot water. Cover. Roast for 2 to 2 1/2 hours or until meat is tender.
Carefully lift rack out onto large tray with sides. Remove cookwell. Slowly pour out and discard hot water. Wash cookwell.
Set cookwell in heatwell. Cover. Preheat at 425 degrees and lightly wipe cookwell with cooking oil (we used Pam). Place meat on rack. Brush sauce evenly over meat. Set rack in preheated cookwell. Cover; roast 25 to 30 minutes or until sauce is set and edges begin to brown.
Serves 8.
Now for the salad....There is a resturaunt in a town near ours called The Kaiserhoff, that has a salad they are known for called Ray's Salad. I came across this recipe from an old co-worker that knows somebody who knows somebody....you get the picture. Here's the recipe for Ray's Salad:
1 can tomato soup
2/3 cup brown sugar
1 cup mayonaise
2/3 cup olive oil
1/2 cup ketchup
1 tsp dry mustard
1/2 cup vinegar
juice of 1 lemon
1 tsp salt
1 tsp paprika
Mix above ingredients with mixer. Refrigerate for 24 hours. Mix this with lettuce, croutons, crumbled blue cheese and bacon. Don't be alarmed that your lettuce is orange- there are several red ingredients.
